The best way to record anything is through a demo. The downside of a demo is that it only records what you are looking at on your screen. If you wanted to record everyone, you're going to have to record your demo through hltv. Recording a demo through hltv will give you the ability to click through everyone.
Once you record someone over a demo, it usually doesn't suck up as much resources on your computer when using programs such as fraps. I have never used xplit but using fraps only lets you record for 30-60 seconds (can't remember which one) unless you purchase or pirate the full version.
